Chipolte Poached Eggs

Freshly Laid in 5 Minutes

In my never-ending attempt to simplify things, I struggled for a simpler, faster way to get just-laid eggs onto the plate. My regular approach was to sauté in olive oil some chopped onion and red pepper. I followed this with some peeled, chopped tomatoes, a pinch of cayenne and some chopped parsley. Into the sauce went the eggs for poaching. The recipe below provides a great flavour punch with hardly any effort. Another great benefit – no fat required!  I hope you enjoy it.

Chipotle Poached Eggs

Serves 1 or 2

Ingredients:
  • 1 hen
  • 1 bottle Chipotle Pepper Salsa (or salsa of your choice).
Method:
  1. Go outside and collect eggs.
  2. Place about 6 tablespoons of salsa into a frying pan.
  3. Heat with lid on (may splatter).
  4. Make an impression with the back of a spoon in the salsa and gently crack the egg(s) into the sauce. Put lid on and cook at a low temperature for 5 minutes or to taste. Note: eggs will cook much faster if they are still warm from the nest!

    The only problem I’ve had is one hen who escaped a few times. By clipping the flight feathers, the problem was eliminated. Just make sure you have a secure coop and lock them in at night.

    I have kept hens for 3 years. The first winter I bought a heated dog pad for them on a timer-on at 4pm and off at 10 am,so they can survive the cold but the winter was so hard on them and me! I covered the pad with a tea towl and straw, too. The heated dog water bowl was in the cage also and connected to the bar that I put in a plastic lettuce box to protect wires and timer from snow. Now I have a roof tarp over the area. The pad is warm to their touch not human touch so it is safe.I had to clean out poop from the coop every morning to keep them fresh since I put thick plastic around their coop with only ventilation out the roof. They survived well but it was harder on me so with the first minus-10 forcast this year ’09 I brought them inside to the basement. I have three dogs so I put the chickens in a very large dog cage on a table with newspaper and straw- cleaned every three days. This way I can get eggs easily without freezing. The dogs are never allowed near them. I lost one chicken already so no way.They will go back outside in March because chickens can survive well enough only until about minus 4-then worry ! I get certified organic food from Davis foods and clean water everyday so the eggs and hens are clean. My friends say they have never had eggs that taste this good. Love your birds and treat them well and they will produce well. Like anything in life. Nicole
